Healthy Chorizo and Eggs Breakfast


If you’re like most people and love chorizo but hate egg whites -this recipe is for you!


Egg whites are super bland IMO and I honestly hated them when I first got into clean eating, but let’s compare the difference between taking or leaving the yolks…



Eggs have almost 4x the calories and 5x more fat than egg whites. That's a pretty significant difference, especially when consi the additional 186mg of cholesterol that you get with whole eggs. Eggs are on the list of things to avoid when talking to most physicians about cardiovascular health. For that reason, switching to egg whites is a good choice if you want to keep your arteries clean and reduce your risk of heart attack and stroke. Aside from the health benefits, I make this almost every morning because it’s super high in protein and keeps me feeling full for a long time. There's nothing worse than eating a meal and being hungry again in an hour! You also want to make sure that you have enough protein in your diet to maintain muscle mass as you age. This will help to keep your metabolism and your energy high.

 

Ingredients

  • Avocado oil spray

  • egg whites

  • Soyrizo

  • taco seasoning

  • optional goat cheese

  • optional avocado

Directions:

  1. Spray a small or medium nonstick pan with avocado oil spray and heat on medium

  2. Add the Soyrizo and cook a couple of minutes just until defrosted or warmed up depending on if your using frozen Soyrizo(about 1-2 minutes)

  3. Pour egg whites over the Soyrizo and add the taco seasoning

  4. Cook on low to medium heat for about 5 minutes or until the eggs are done

  5. Optional: Serve with goat cheese and/or avocado on top
