Vegan spaghetti with a kick
I know it’s tough to get excited about zoodles… because let us be honest, how can you compete with pasta?!
When I told my husband I was making zoodles for dinner the look on his face said everything! 😂
Surprisingly this meal turned out to be so good we both went back for seconds(and basically guilt-free because everything in this pasta is low in calories AND very low in fat).
There are only 7 ingredients plus water and you can throw this together in 10 minutes if you have the KitchenAid spiral attachment. I actually bought this attachment as part of a set when I was looking for an apple slicer and I am so glad I got it! Call me lazy, but I don’t think I would ever make zoodles if I had to make them manually.

For this recipe, I use avocado, but feel free to use any other type of cooking oil you like. I prefer avocado oil because it has a much higher smoke point(520*F) than other oils - plus it's healthier than most of the others.
The Arrabiata sauce I used was this one from Trader Joe's. I found it here on Amazon in a 2-pack in case you don't live near a TJ's. It was surprisingly good and has just the right amount of spice.
Ingredients:
1 tbsp Avocado oil
1/4 chopped sweet onion
6 zucchini
1 jar Arrabiata Sauce
1/4 cup water
1 small can of tomato paste
salt & pepper to taste
Directions:
Step 1: Heat the avocado oil in a large pan on medium to high heat
Step 2: Add chopped onion and sauté for 30 seconds
Step 3: Add the zoodles and sauté for another minute
Step 4: Pour the Arrabiata sauce over the zoodles and add 1/4 cup water. l
Step 5: Add 1 small can of tomato paste and stir until well incorporated
Step 5: Add salt and pepper to taste
